French mountain lentils are dark green with a light marble design and remain firm when preparing dishes. French mountain lentils are of the same variety as the Du Puy lentils. These lentils stay in shape when you cook them and are therefore perfect in salads and risottos. They have a peppery taste and smell and suit well-defined flavors such as smoked fish and feta. The lentils do not need to be soaked.
